Cheesy Meatloaf

Ingredients

2 lb ground beef

4 eggs

1 onion, diced

1 bell pepper, diced

1 tomato, diced

2 cup bread crumbs

3 Tbsp mustard

1 tsp salt

½ tsp black pepper

1 Tbsp garlic, diced

20 slices of bacon

12 oz. melting cheese (mozzarella, butterkase, Gouda, etc.)

1 tomato

Pickles


Tools:

2 bread pans

Directions

Sauté the onions and bell pepper, until softened.

Combine the ground beef, eggs, onions, peppers, tomatoes, bread crumbs, mustard, and spices.

Line the bread pans with bacon, slightly overlapped bacon. Ensure that they hang over the edges of the pan.

Spread half of the beef mix in each pan. Create a slot in the center and fill it with the cheese.

Spread diced tomatoes and pickles around and cover with the remaining beef mixture. (Ignore this if the peppers & onions in the beef are enough.)

Fold the bacon slices to close up the loaf, cover with foil, and bake for 45 minutes at 350° F.

Remove the foil, remove the meatloaf from the pan, then flip it over onto a wire rack on a baking pan. Broil until the bacon is crispy.

Slice & serve.
